The Priest takes the paten, on which rests the Host (the bread which will become the body of Christ at the Consecration).  He recites the prayer "Suscipe, sancte Pater" ("Accept, O holy Father...").

This prayer encapsulates the Catholic Eucharistic teaching: that the Mass is a sacrifice which is offered by the Priest to God on behalf of the congregation and for all other Christians, both living and dead, to bring about their salvation.

At the end of the prayer, the Priest makes the sign of the Cross with the Host to show that it will become the same Sacrifice as that of Calvary.
