Unless some serious cause prevents it, the body of the deceased person is to be brought to the church where all the funeral rites are to be observed. Usually this will be the Parish Church. [2]
The priest who accompanies the body to the church, must wear a black stole over his surplice, or he may wear a black cope. Those who are to walk in the procession should carry torches or lighted candles.
The procession is formed as follows: Confraternities go first, then the processional Cross, followed by the Clergy, regular and secular who walk two by two according to rank, devoutly reciting the following Psalms. The coffin is carried behind the Priest, and then is followed by the mourners, who pray silently for the soul of the departed.
Before the procession sets our, the priest sprinkles the coffin with holy water while saying the following antiphon:

Ant: If thou, Lord, wilt keep record of our iniquities.

If the journey is a long one, the Gradual Psalms may be recited or the Psalms from the Office of the Dead. At the end of each is said Requiem aeternam etc. The recitation of the Psalms should continue gravely, distinctly, until the procession arrives at the Church. At the entrance to the Church the Antiphon is repeated:

The coffin is set down in the middle of the church, with the foot towards the altar; unless the deceased be a priest, in which case the head is towards the altar. Candles are lighted about the body.
The Office for the Dead is said here, where possible. If the Office of the Dead is to be said later in the day, or on the next day, the "Kyrie, Eleison" is said, as follows:

The Priest raises the Host on the paten to the level of his eyes and says the following prayer:

and dead, that it may profit me and them for salvation unto life everlasting. Amen.
The Priest returns the Host to the altar, and making the sign of the cross with it as he places it on the corporal.
The Priest pours wine into the chalice. The Priest then pronounces the following prayer [but without making the sign of the cross over the cruet containing the water] and then pours a small amount of water into the chalice :

The Priest raises the chalice to the level of his eyes and says the following prayer:

E offer Thee, O
Lord, the chalice of salvation, beseeching Thy clemency, that it may ascend before Thy divine Majesty, as a sweet fragrance, for

The Priest returns the chalice to the altar, making the sign of the cross with it as he places it on the corporal and covers it with the pall.
With his hands joined upon the altar, the Priest bows slightly as he says the following prayer:

Raising his eyes to Heaven, extending and then joining his hands, the Priest invokes the Holy Ghost whose operation is necessary for the great act of transubstantiation which will follow shortly:

The Priest incenses the Host and chalice in the form of a cross three times and then passes the thurible around them three times in an encircling movement:

The Priest incenses the crucifix and altar while reciting Psalm 140, 2-4:

Lord, be directed as incense in Thy sight: the lifting up of my hands as an evening sacrifice. Set a watch, O Lord, before
my mouth, and a door round about my lips: That my heart may not incline to evil words, and seek excuses in sins.
Handing the thurible back to the Deacon he says:

The Priest moves to the epistle side of the altar and a server pours water over his fingers as the Priest says the words of Psalm 25, 6-12:

The Priest elevates and joins his hands, looks towards Heaven, bows profoundly towards the altar and with hands extended begins the Canon (or rule of consecration) of the Mass. The server pours water and wine over the fingers of the priest, into the chalice, who dries his fingers with the purificator cloth, and says, silently:

The priest then goes to the middle of the altar, kisses it and says:

The Priest goes to the Gospel side of the altar and reads the beginning of the Gospel according to Saint John, or on certain days, the Gospel of the commemorated feast or feria. The Server and the congregation stand and sign themselves, like the Priest, on the forehead, lips and breast.

N the beginning was

After Mass the Priest removes his chasuble and maniple and vests in a back cope. The Deacon and Subdeacon retain all their vestments except the maniples. The Subdeacon takes the processional cross, and preceded by the bearers of incense and holy water, goes to the head of the coffin and stands there between two acolyes with lighted candles. The rest of the clergy gather about the bier with lighted candles.
The Celebrant, after bowing to the Altar, stands at the foot of the coffin, the bearers of incense and holy water standing behind him towards the left. He recites the following prayer:

During the responsory, the Priest, assisted by the Deacon, puts incense into the thurible and blesses it in the usual way. The Cantor and Choir sing:

The Priest intones the "Pater Noster" and all continue the prayer silently. Meanwhile the Priest goes round the coffin, sprinkling it with holy water, three times on the left site and three times on the right, bowing deeply as he passes before the altar and cross (genuflecting if the Blessed Sacrament is present). After returning to his original position, he takes the thurible and censes the coffin in a similar manner. Afterwards he says:

bid Thy holy Angels receive him (her) and lead him (her)
home to paradise. And because he (she) hoped and believed in
Thee, may he (she) never feel the pains of hell, but possess the
joys of heaven through all eternity.

The body is carried to the grave prepared for it while the clergy sing the following:

AY the Angels lead you

If the grave is not blessed the priest blesses it, saying:

He sprinkles the grave with holy water and then censes first the coffin and then the grave. If the grave was already blessed, the blessing, aspersion and censing are all omitted.

LESSED be the Lord,

The Priest makes the sign of the cross over the coffin, saying:

Returning to the Church the Priest begins the Antiphon "If Thou O Lord", and recites with the clergy the Psalm "Out of the Depths", as above. Before the Antiphon is repeated at the end of the Psalm, the following verse and response are added in the plural:

[1] The rubrics and order for the Burial for the Dead are extracts from the Ordo Administrandi Sacramenta and are taken from The Small Ritual, published in 1956 by Burns, Oates and Washbourne Ltd, London.
[2] Before the burial, Mass should be celebrated in the presence of the body. The body must rest in church with the feet towards the altar of the chapel or oratory in which the body is lying. The body of a priest, however, lies with the head towards the altar. The cemetery should be consecrated ground. Failing this, the grave is to be blessed. Children who die unbaptized are not accorded Christian burial, neither are notorious apostates, publicly excommunicated persons, suicides of sound mind, duelists, those who demand in their will to be cremated, and unrepentant public sinners. The Bishop must be consulted in doubtful cases, if time permits. If the doubt persists and no scandal is likely, Christian burial should be given.
